This course is designed for Mezcal professionals who have taken the ASI Level 1 course and want to deepen their knowledge of Oaxaca’s wild agaves. During the Level 2 certification, we will explore the past, present and future of Oaxaca and discuss recent challenges and successes in the production of agave spirits in the region. This course will also address aspects of the proper serving of fine spirits such as mezcal, ranging from Michelin-starred services to more rustic settings.

At the end of the training, the Certified Mezcal Salmon will be knowledgeable in the theory, service and sensory analysis of agave spirits.
